When you consider coffee beans, do you first think about a prepackaged bag filled with ready to grind beans? In fact, the majority of people don't have any idea about what procedure moves those bags of beans into their homes. Types
There are basically four different categories of coffee beans. Coffee Arabica is undoubtedly the best liked. Those beans account for approximately three quarters of the product sold in North America. Where Do They Come From?

After the seeds are dried, they are processed and roasted depending upon the type of coffee bush, to varying grades. Once the desired flavor and strength are achieved, they are ready for bagging or further processing while some are diverted to a decaffeination procedure and others for flavoring. We will not deal with those sometimes toxic procedures at this point.

Coffee beans are often sold in prepackaged bags roasted for ultimate flavor but customers can buy raw coffee beans, take them away, and roast them elsewhere. The roasting of the beans depends upon the kind of drink you might prefer.

A short roast makes a very light coffee "flavor" and in fact, permits the essence of the coffee beans to travel through; whereas roasting for lengthier periods yields a richer robust flavor with bitter tones and the beans tend to lose their unique essence. The roasted beans are packaged in airtight sacs and containers, and then transported to stores around the globe.

When you walk into a typical coffee shop (not Dunkin Donuts), you've typically got a unique crew of coffee drinkers. Each version may look a bit different - but their overall interests and personalities are most likely quite similar. Let's meet them, shall we?

He's got a laptop. Glasses. Either a large cup of regular or an herbal tea sits next to him. He is most likely in school, with either graduate school as a present occupation or in the near future. Despite having a meager income, his Macbook is gleaming with features and user-friendliness. He looks up every few minutes to scan the room for someone who may outrank his ambition. This man is an intellectual, so if you strike up a conversation with him, get ready to think.

She'll be engrossed in a serious conversation - either on her cell phone or with a girlfriend sitting near by. Words flying out of her mouth at a very quick and unnecessarily loud clip, enhanced heavily by the Latte (with skim milk, of course) she's holding in one hand. The dialog is nothing mindblowing - maybe last night's Project Runway, a great price on some Coach, or an experience at a downtown bar. She's on the vapid side, so if you strike up a conversation with her, make sure it's a topic from Cosmo or Perez.

In order to look the part, the couple will be perusing the Times or the Journal. They occasionally ask each other a question, or offer some commentary, but are mostly involved with their newspapers and their caffeine-laden cup nearby. He'll be trying something new - Maple Nut Crunch was today's choice. She's graduated from a Latte to a Cappuccino, mostly because that's the thing to do. Their brand new BMW is sitting outside, which he glances over at periodically, smiling under his breath that his legal career could afford them such a luxury. They aren't the friendliest people in the shop, so if you strike up a conversation with them, make sure you've got a beach house and a Platinum Visa.

On any given day, all or none of these people may be present. They may shake things up and order a French vanilla coffee or come in with a guest. All in all, though, you've got an interesting array of uniqueness which can provide some stimulating academia or a limited vocabulary that utilizes "like" after every fourth word. Customer Review: disappointing
I recently purchased this coffee maker. I loved the idea of being able to grind & brew at the same time. I am VERY disappointed with this coffee maker. The coffee it makes is OK but you need to use a lot of coffee beans because some of the ground beans don't make it to the filter. The left over coffee clumps up due to the moisture in the unit so the grinder needs to be washed after EVERY use. I'm disappointed this coffee maker doesn't work better & I'm returning to my separate grinder & coffee maker.
Customer Review: Another Good Cuisinart Product
I was concerned by reading the reviews about having to constantly clean the coffeemaker but it's not been as bad as I had thought. I don't always use beans to make coffee and that's when cleaning becomes a necessity. When you use grounds or tea, you just measure into the filter and only water goes through the grinder, so I usually just rinse the grinder and let it dry. At first, the maker may seem very complicated to use and to program but once you get used to it, it's easy.


There was a time, a few years ago, that I had seriously thought of starting a gift basket business of my own, then I moved states and totally forgot about the idea. Until one day when I cleaned out my computer files and ran across a few old notes. While I doubt I'll ever start that gift basket business, I know these basket ideas would make great holiday gifts. Air-Quality? Water-Quality? A Jaunt to Jamaica

Last week I told you about our trip to Jamaica and this is the end of the story.
If you remember, the purpose of the trip was to attend my life partner's son, Peter's, wedding. He married a wonderful California girl named Danni (short for Danielle). Peter and Danni wanted to get married in a gazebo on the beach in Jamaica. They arrived on Friday because they had a multitude of things to arrange and had to be in Jamaica for three days to establish residency. More about the wedding later.

Anyway, the wedding was scheduled for Wednesday so, to kill time on Tuesday, Peter got our whole group of ten people (counting the kids) together for a catamaran sail down the coast. Have you ever been to Jamaica? If you have, does the phrase "Dunn River Falls" fill your heart with terror. Oh, I'm exaggerating! It's probably not too bad for you younger, more athletically inclined kids. I, however, am a little longer in the tooth and a bit of a klutz to begin with! They start the tour by making you rent what they laughingly call "water shoes" for $5.00 per pair. These are like ballet slippers with grooved rubber soles to help you climb through the water. Most of the shoes I saw must have been used by Columbus when he came ashore. They were old, with smooth bottoms and, with my pair, holes on the ends of both shoes where my big toes stuck out and about three sizes to small. I should have traded my shoes in for a first aid kit.

Well, we started climbing the falls. Yes! Climbing the falls! I don't mean on stairs or an elevator alongside the falls. I mean IN the falls! Yes, you will get wet! In my case, I got soaked. You are trying to climb along from smooth stone to smooth stone, but sometimes you slip. At one point, I even went completely under. Thank the deity that I did not bring my digital camera along! Navigation was not a problem - just keep going UP! At least the water quality was great. Cool! Clean! Fresh! After all, it was kind of fun and the guides were friendly and helpful. However, they don't seem to be able to finish a sentence without the word "Mon". But it's cool, and after a few days you find yourself speaking just like the natives.

Well, here I am at the end and didn't even tell you about the wedding and our trip into town yet. Will have to get to that next week. Hang in there with me, folks, and remember your last trip to Jamaica - or your next!

That one simple beverage could generate so many romantic stores and so much business is amazing. Yet, since its inception, the dark and powerful liquid known as coffee has turned into quite a lucrative product.

One study at Harvard followed over 100,000 individuals for nearly twenty years and drew the conclusion that moderate consumption of caffeine can help reduce diabetes, while other studies show a reduction in cirrhosis of the liver and decreased severity of asthma.

The antioxidants in coffee have been touted as helping to keep hearts healthier, albeit there is still debate about whether the risks outweigh the benefits. Coffee is a diuretic, thus encouraging frequent urination. Some allege that caffeine stimulation affects the nervous system, particularly that it can result in long term degeneration of the nerves. Caffeine withdrawal can lead to poor sleeping habits.

But, for good, bad or a combination of both, coffee is not going anywhere anytime soon, if ever. Economics alone can basically guarantee that since coffee is a commodity only second in dollar sense to oil.

Whether traded on exchanges in New York, London or Hong Kong, with over four hundred billion cups of coffee consumed yearly, this black gold is only increasing in popularity. Total retails sales estimate at near nine billion dollars annually, although only ten to twenty percent of adults drink at least one cup daily varying by country. Adding in the grinders, brewers, roasters and cups that go along with the coffee product and the numbers are astounding.

With the rise in both basic coffee and specialty retail prices, coffee's future looks extremely bright and this is not just for specialty coffee shops like Starbucks. Home brewers and roasters can also brew a tasty espresso allowing the enjoyment of coffee flavors and blends to occur both in and outside the home, adding to the overall coffee industry. By adding just a few special ingredients, anyone can have a mocha, cappuccino or latte in just a few minutes in the comfort of their own home.

Besides having a coffee shop business plan, you need to have your funding source(s) defined when starting a coffee shop. There are many options available for you, but we will talk about the most common.

SBA - So many sources push SBA loans, SBA LOANS, SBA LOANS! Let me first say, the Small Business Administration loan program is awesome, if you can get approved. Although they have loosened up some of the requirements lately, it is still somewhat tough to get approved.

First of all, the government does not loan the money. The standard program is a bank loan though there are some micro loan programs available that use funds from capital groups. Most of these loans are normally collateral loans, and they are backed by the US government similar to HUD and FHA home loans. What that means is that if you should happen to default on the loan, the government will reimburse the bank for certain percentage of the loan amount. That is good for the bank, and good for you if you can qualify for one of these loans. They are tough to get I'll say again, and there is a lot of paperwork to fill out and file. You also have to have good credit, very good assets, low debt to income ratio, and unencumbered collateral.

Some SBA loans can take some time to get approved and then funded, but if you are approved, they usually have up to a 7 year repayment period and a favorable interest rate. It's best to talk to an approved SBA lender for particular details, as the bank calls the shots, the SBA only backs the loan. You can work with a local SBA office as well for details or go to www.sba.gov

Personal - This is the easiest form of financing, but less likely for most people. Try to put all you can into this venture from your own pocket without ruining your marriage, family or jeopardizing your home. If you do get financing, you will be required to pitch in at least 25% of the total you need to start your coffee shop anyway. The more you have in, the more the bank knows how serious you are and more likely they are to fund you. They also know the more you have in personally, the less likely you are to run when the times get tough.

Cash is king. Liquid assets are a great source of funding. Liquid assets are assets that can be converted to cash quickly like stock, bonds, or a 401(k). I only recommend any retirement plan as funding as a last resort. This is what I did when I ran into capital problems and could not get a loan because I was maxed out. It's best though to leave this money alone and search out other options.

Real estate equity - This is a good source of funding if you have enough equity in your home or another piece of real estate. The interest rates are usually favorable as well.

Friends and family - if you cannot put in as much as you need to, friends and family are a good way to raise additional capital. Just be sure it's clear how you structure the money deal: are they investors, partners, both? Are you issuing them stock in your corporation? Whatever the deal, get a contract attorney to draft the paperwork to make it legal. It will cost you about $500-1000 or so for this service and when it's done, you will be glad you did it. Spell out all details.

I once saw a guy invest in a restaurant and the owner wanted a loan only, so they had a repayment plan but not any written contract stating what was what. The investor assumed he was now a 'partner', as in part owner and started showing up daily, scheduling meetings, wanting to rearrange the store and making menu change suggestions. That was not a pretty situation!

Investors - most high dollar investors want to see success before they pony up cash to someone they do not know. However, it can happen at the beginning though. You need to surround yourself with PWM: People with Money. This can also be the friends and family route. Ads online and in the paper are ok, but will most likely bring you more weirdoes than real investors.

Join local business organizations, talk with the Economic Development Corporations and chambers of commerce in the areas you are looking to open and ask them for investor referrals. A lot of investors shy away from seeding food and beverage related businesses unless it is a liquor establishment but they are out there.

Non-traditional lenders - aka private equity firms, capital groups fall into this category. Their guidelines are less stringent but again, most want existing businesses looking to expand. They also are not normally looking for food industry investments because the risk is too high and search out tech type companies that have a higher return. However, this is again certainly not the law.

Banks - traditional lenders, they are tough ones to get on your side if you have NO money to kick in or marginal to bad credit, and no collateral. Sometimes just a lot of work, a lot of talking and an awesome coffee shop business plan may just be the thing you need to get them to help you. A banker on your side that believes in you, and you have established a relationship with could be what stands between you and a funded loan. Treat them like gold.

Credit Unions - usually most do not do much in the way of business financing, but for those that do, their guidelines are slightly more relaxed than a traditional bank, like those for personal financing but you will still have to qualify.

Credit Cards - I am not recommending this option! If you do use them, be sure they are a very low interest rate, even 0% with some of the introductory rates some banks give. You may want to have back up cash in case you run into problems with one.

Be careful, however because after the intro period is over, the rate may go higher than you think if you are still carrying a balance. Also, if you are late one time, you run the risk of getting rate-jacked. That is when the credit card company jacks the interest rate to the default rate, as high as 29%! Yes it should be illegal but unfortunately for us, it is not. They can also raise the rate whenever they want regardless if you are in default or not. It's in your agreement with them; i.e. the fine print. Once the rate is up there, it is very difficult to get it lowered again. Chase is the most famous for this. Just be careful!

Credit cards are good for purchasing however, if you get the rewards points or airline miles programs. I have several I use for purchasing and have gotten several airline tickets and thousands of dollars in gift cards for using the cards and getting points. Besides that, you can effectively buy more time for your accounts payable if you plan the billing dates correctly.

So whatever source(s) of funding you choose for starting a coffee shop, be sure you know what you are up against. Do your research and talk to the people that can help you. Stay focused, and well informed regarding your planning stages. Be sure your prospective lender gets a copy of your coffee shop business plan. All lenders will want to be sure you know what you are up against! Good luck.

Hands down, makes the best cup of tea! Very fine mesh keeps particles from ending up in your cup. I previously used a plunge style coffee press for making tea, but this is much, much better. As the other review mentioned, the only very slight inconvenience is that it is a bit more difficult to use with cups that are non-standard in size. But, it works perfectly with 99% of the cups I use for tea. A great product!


Susan starred down at her sugar-free vanilla non-fat latte with two Splenda and she giggled to herself. As she dipped her coffee pinwheel cookie in her latte she heard a voice across the very small table ask her a question, "What made you laugh just now?" At first she was surprised and then she remembered. She was on a date. "Oh, I was just thinking about how ridiculous it is that I'm dipping these fattening little cookies into this supposedly non-fat drink."

He chuckled a little, "That is pretty weird. Can I say something to you?" He was sipping his Chai tea and trying fairly hard to act very wise in the background of it. She smiled and leaned a little closer as she tried to remember his name. He continued, "You seem like someone I could curl up with on the couch." She thought he thought he was cunning and it amused her. She supposed she wanted the same thing anyway. He was pretty cute to start with. "Yeah, I was thinking the same thing about you." She invited him over for tomorrow night to watch a movie. After all, she didn't want him to think she was fast. She giggled at herself and didn't kiss him goodnight. She figured that she might as well let the tension build until later.

Susan was in bed and with a man. She was amused and he had been too. She was with him, but she might as well have been alone. She like the personal contact, but it was no more than that, personal. She didn't want to use him so she faced him and gave him a look as if she was really truly happy. She felt as if she was in a movie.

Then he spoke and it ruined it. "Have you ever been in love?" She lost her composure for a second and then quickly recovered. "Yes, and I still am." She couldn't be dishonest after what they just did. He replied, "Mine was a lawyer, how about yours?" "He's impulsive, sweet, creative, the only person I really feel knows me, and very married. Very." She turned her back on him and hoped it didn't hurt his feelings as she began to cry. Susan felt him shift uncomfortably in the sheets behind her. "I'm sorry, I didn't mean to make you upset."

She worked on getting herself under control and sat there in that stunned state. "I never committed adultery with him you know. No, I was too far above that. He doesn't know anything and I can never tell him. It's like an invisible knife that twists in my side every hour. It hurts me." She realized that she was talking to herself again and that the man was not in the room, although he thought he was.

He brought her coffee and she starred into it. She was naked, and not just physically. For once, she didn't care. There was no sucking in her stomach, no hunching over, just sitting here sipping her coffee. She looked in his face for the first time. "What's your name?" "Adam, what's yours?" "My name is Susan and I'm afraid....Adam, that I'm not myself today and I apologize."

"I don't know you that well Susan, well probably not at all but I would say that you're more yourself than I have seen you, therefore it is time for me to take my leave." As he went towards the door she said, "Adam, thank you for understanding."

The door shut and she dreamed of pinwheels, the pinwheels that brought her amusement, for those where the cookies that the man she loved placed on her plate, where she laughs, and they shared everything including the cookies. His eyes echoed in her mind.

"The Turning Coffee Pinwheels"*

Ingredients: 1 cup of whole-wheat flour, 2/3 of a cup of all-purpose flour, 2 tsps of non-fat milk, 1 tsp of baking powder, 2 tsps instant coffee granules, 1/8 tsp of salt, 1/4 cup of sugar, 1/4 cup of Splenda, and 1/2 cup of margarine softened.

1) Mix the flours, baking powder, and salt in a bowl. Beat in a 1/4 cup of margarine with 1/8 cup of Splenda, and 1/8 cup of sugar with an electric mixer at medium speed until creamy. Mix in half of the dry ingredients. In the remaining dry mixture beat the remaining margarine, sugar, and Splenda until creamy. Mix in the coffee mixture.

2) Roll out both doughs on a floured surface into rectangles 1/4 inch thick. Brush the plain dough with the milk. Top with the coffee dough and roll up tightly from a long side. Pinch seams to seal. Wrap in plastic wrap and refrigerate for about 30 minutes.

3) Pre-heat the oven to 350 degrees. Butter two cookie sheets with cooking spray. Slice the dough 1/4 inch thick and place 1 inch apart on the cookie sheet. Bake for about 12 minutes or until golden. Transfer to the wire racks to cool.

4) Enjoy with a delicious cup of the coffee of your choice.

    Jakarta is a city of noise, a cacophony of noise. From the moment you arrive in the city, whether it is by airplane, train or bus, the new arrival steps into a warm, humid bath of sound. The noise is mostly man made, motorbikes, trucks, cars, horns, sirens, bells. It is a place not for those who like peace and quiet.

    Rural Indonesia is quite the opposite- a mixture of man made and nature's sounds gently rolled into a smooth, round packet.

    West Java is normally not known for its coffee cultivation. Back in the early Dutch Colonial days, most of the original coffee was planted in a wedge shaped curve that stretched from Batavia up into the hill country around Bogor and Sukabumi. The coffee was grown here mixed with Pepper and Clove trees. The more valuable spices, Nutmeg, cinnamon and nuts such as cashew were traded from the islands further to the east through the Port of Batavia (Jakarta), then back to Europe on company ships.

    Coffee initially grew very well on the flat land around Batavia. Today the areas where the coffee was planted are densely populated inner city suburbs- there is no sign of the small private plantations that once thrived there. Likewise the rolling hill country that rises from the city towards Bogor has little sign of the past agricultural endeavours. As recently as world war 2, Dutch plantations stretched along the banks of the Cileungsi River, and up into the hills behind modern day Bukit Sentul and Cibinong. The Cileungsi River was a pleasant waterway used to transport Coffee, fruit, Cloves, Pepper and rubber grown in orderly plots down into Jakarta for local consumption and export.

    Today the toll road runs through to Bogor, 45 minutes south of the Capital City. Along the way the most obviously greenery is the golf courses of Emeralda, Riverside and Bogor Raya. The remnants of the plantations surprisingly can still be found. Driving through Cibinong towards Jonggol the hills are still farmed; rubber trees and cloves planted decades ago healthy and bearing latex and fruit. However it is much more difficult to identify where the original coffee plantations were.

    As in many growing countries, the truth is the coffee is still there, if you know where to look for it. Over the years I have either stumbled upon remnants of the original coffee plantations, or been invited to view coffee that has been unearthed growing wild- tall and straggly, amongst new growth of secondary rainforest.

    Sukabumi is a city southwest of Bogor. The geographic area that covers Sukabumi down to the Indian ocean port town of Pelabhuan Ratu (Queens Harbour) was at one time settled heavily by Dutch settlers. The clubs at Pelabhuan Ratu are mentioned in great detail by writers as late as the 1920's and 1930's as being busy havens for planters and their families when coming to town on market days. Again it is difficult to believe today, but a detour up onto the slopes of Gunung Salak or the hills surrounding the harbour confirms the continuing existence of the prime plantation crops, including coffee.

    In the late 1890's and early 1900's, rust played havoc with the Arabica coffee plantings throughout the Dutch East Indies. Much of the coffee was wiped out and replanted in first Liberica, then Robusta. Robusta remains the main type of coffee grown today, despite efforts to try and focus growers on the more difficult to cultivate, but higher returning Arabica.

    Around West Java Robusta is common, Arabica less so. Arabica stands are often remnants of the original plantings- by DNA testing can be pretty accurately traced back to either Malabar or Ceylon Arabica root stock. These were the types of coffee that the Dutch brought into Batavia and planted early on. Modern Arabica plantings also exist, becoming more common around Bandung and even as far North as the Bandung rise of Puncak Pass.

    At this time of year the coffee growing areas are an extremely pleasant place to spend a night or two. It is the monsoon season, and in mountainous West Java that means heavy, turbulent afternoon thunderstorms. The original stands of coffee are often mixed in with newer plants of robusta and the staples of Papaya, Banana and Pandan. Vanilla is also often grown at the higher altitudes. Around 3 in the afternoon, the wind drops and the air thickens like the atmosphere in a Botanical garden Glasshouse. The chatter of birds, crickets and even the bleating of goats lessens, in expectation of what's to come. When the rain arrives it is preceded by distant thunderclaps, and the sizzle of lightening stretching across the hazy blue sky, occasionally reaching down to a ridge or reaching tree-top. The first drops are heavy and bloated, literally splattering on the soil and Banana leaves. The coffee trees, growing beneath the taller canopy, are initially well sheltered fro the rain, but soon everything- including chickens, children and coffee are wet through.

    The wind slowly picks up, pushing the rain from a heavy vertical fall, to a cutting horizontal path. Clay tracks turn to mud and any villager unfortunate enough to have been caught out in the Sawah/Padi or on a motorbike, is soaked to the skin. The coffee trees stir in the wind, seemingly enjoying the moisture, the deluge.

    The end of the storms often coincides with dusk, the period of the day when activity ebbs toward evening, and night music. The remnants of the rainfall drip melodically from the tall trees, through the coffee trees below onto the ground. Chickens root for grubs that have been drawn to the surface. Children emerge from beneath red terracotta tile roofs to play in the puddles.

    The music is taken up to a new level, like an orchestra tuning their instruments, when the local mosques begin calling the villagers to Sholat Magrib. Every village has at least 1 mosque, so as the evening falls the voices of the many imam blend and rise together, in balance. Magically the sky begins to turn a fiery orange, flecked with gold and red amongst the remaining wisps of thunder cloud. Only Tropical evenings embody the colours, sounds and smells such as these. The slight fragrance of sweet jasmine from coffee blooms, tinged with the smoky sweetness of charcoal grilled chicken sate. The murmur of an evening breeze that touches the higher slopes of the valleys above the villages and the rising chatter of the evening masters of gentle, natural noise- the Cicadas, crickets, cicak and geckos.

    It is hard to believe that many of these villages are a mere hour or so from the more braise and metallic noise that is Jakarta or Bandung. An evening amongst the coffee growers of West Java is a trip back in time to a much simpler and perhaps wholesome era.

    Brews a perfect pot of coffee and keeps it nice and hot in its strong, durable double walled insulated carafe. There is no continuous cooking/burning from a hot plate like in other coffee makers. This makes it easier to determine which ones should be used and which ones should be removed. However, there are some producers who will use a more complex and time consuming method.

    Dry processed beans usually provide the consumer with a less acidic product. Some acidity can be desired in certain blends but too much acidity can be a bad thing.

    As beans heat up during the roasting process they produce different aromas and levels of acidity. They also will release their different flavor components. The first stage of roasting is when the beans absorb the heat. The beans will go from green to yellow and then from yellow to brown. Green does not necessarily mean a color but rather fresh or not yet roasted. Roasting when properly done will smell like popcorn or toast.

    When the temperature is about 350 degrees Fahrenheit the sugars will caramelize. This is of course helped along by the increase in moisture temperature of the skin. Reaching the proper amount of caramelized sugars is important to develop a good brew during coffee roast.

    Then at about 400 degrees Fahrenheit the beans should expand and reach about double what their original size was. They should also be light brown, but this can vary depending on what kind of beans are being used. They should also reduce in weight to about 5% less than their original weight. Then as the temperature continues to increase the beans will lose more weight and then release CO2. When the temperature hits about 450 degrees Fahrenheit, the beans should be a medium to dark brown and should be oily. Often there is a loud pop heard at this stage which is known as the second crack phase. This is where over roasting can occur and care and attention is necessary. Burnt taste can occur when the oils are boiled off and combine with the oxygen in the air. The goal is to have the perfect balance and combination of bitterness, acid, and a wide variety of different profile characteristics.

    The body of a coffee is slightly misleading. It does not necessarily refer to the actual thickness of the coffee. In actuality it refers to the proteins and fibers that are found in the coffee. It specifically refers to the feeling on the tongue when it is rubbed against the roof of the mouth. It is fat content in the beverage that is largely controlled by the roasters and not the brewers. Unfortunately too light of a coffee will usually contain a bitterness in the final result. However, too dark a brew with sometimes produce too much of a chocolate tone with a burnt taste. Experimentation is the best way to find the coffee the best suits your desires without needing to go anywhere, even if it's nearby. With this said, its time to get out your cappacino, coffee and espresso maker.

    I have owned Mr. Coffee's and various types of perculator type coffe makers over the last 38 years, but I have never had a coffee brewer/maker that made coffee as good as the Bunn home brewers. The first one I bought lasted over 10 years. I discovered that I could have fixed it myself with a new top water resevoir after I had bought a new one. As long as you clean them regularly, they will last a long time. One hint to good coffee from the Bunn, use filtered or distilled water if you live in the city. Chlorine will make the coffee taste bitter, regardless of the coffee brewer.


    Continuing with our Green Bean Series, this month we're going to take on defects in wet processed Arabica coffee beans; their cause, how to identify them and the effect they have on the roast.

    Our "Roasters Tools - Green Bean Series" is a five part evaluation of how the characteristics of green coffee beans affect the outcome of the roast.

    Roasters who consistently purchase strictly top grade premium coffees may have only rarely been confronted with defects, while the majority of roasters run across them much too often, even when presented with what is being sold as "Specialty" grade coffees.

    The fact is, any one of these dozen defects will negatively affect the quality and alter the taste of the coffee you're producing. These defects are both identifiable and preventable.

    The defects in this article are different than the "formation" defects we talked about in a previous article.

    With that in mind, we aim to give you a very straightforward, to the point identification of what these defects look like, their causes, and how they can affect the profile of your roast.

    The Twelve Key Defects To Look Out For:

    FADED BEANS

    Faded beans can be a result of either over drying or absorbing excessive moisture, depending on the environment. Either way, faded beans have a low resistance to environmental factors.

    The effect on the roast is that they give a dull roast regardless of the roasting profile. The result is a soft bean with musty and woody flavors in the cup. And, the percentage moisture loss will be very high. The color of these beans is pale, whitish brown.

    Normally, they result from beans that have a high moisture content (11% - 13%) and when stored in a warehouse, they'll tend to dry out. In the process of drying out, and because they are not in contact with direct sunshine, these beans tend to fade.

    Instead of drying, these beans are actually rotting and developing molds inside. It's these molds that cause the beans to dry excessively, producing their pale to whitish brown color.

    In addition, during the drying of wet or dry processed beans, the coffee can be negatively affected if not properly exposed to sunshine at the appropriate stage in the drying process.

    Another cause is when coffee has been over-hulled using a hammer mill. In this case, the beans will come out with a dull color as a result of the outer cells being bruised and microscopic dust permeating the outer layer of the beans.

    One final factor that can contribute to the fading of coffee is from older coffee that has been kept in a warehouse for two to three years or more, causing the beans to dry out, develop molds and other negative consequences.

    AMBER BEANS

    These beans have a bright shiny gold color. The cause is due to mineral deficiencies in the soil (including iron).

    When you roast these beans, the cup will be lacking in acidity, with a flat harsh body and a bitter flavor. Also, the roast produced by these beans will be very dull in color.

    COATED BEANS

    These beans have a sticky silver skin caused by either overbearing or from being drought affected. The characteristics of these beans look whitish, rough and display microscopic lines from the silver skin.

    In the process of roasting, you'll experience soft beans with excessive chaff. The roast can result in negative effects in the cup, including excessively high grassy, hay, earthy, woody, greenish and potato flavors.

    GREEN WATER DAMAGED

    These are fully processed beans that, when hulled, get in contact with water where a chemical reaction takes place, turning the beans a greenish color. This situation results in the beans becoming moldy and toxic.

    PULPER DAMAGED

    In the process of going through the pulping machine, coffee beans can get stuck, creating excessive pressure which causes the beans to become wounded.

    These wounded beans will burst and then begin to slightly oxidize, become contaminated with water and over ferment, causing molds which result in earthy, leather and musty flavors.

    In addition, the roasted beans will be uneven; some will be split, while others will appear round and mixed together with the solid beans.

    INSECT DAMAGED

    Berry moths inject the coffee cherry in the process of laying eggs, creating a black needle-like hole.

    Antestia bugs damage beans causing them to bruise, which produces rough black to yellow-like colored spots.

    Beans with these types of insect damage will give a soft roast and the beans will tend to shrink, creating dominant musty, alkaline and salty flavors.

    IMMATURE BEANS

    Picked under-ripe, often as a result of overbearing and drought affected conditions, the characteristics of immature beans include a rough surface and greenish color with a sticky silver skin and will usually have thin edges.

    The roast will be very dull, with open center-cuts, soft beans and subsequently produce no acidity, heavy body, with greenish and grassy flavors.

    These beans can also lead to Quakers in the roast; visible only after roasting by their pale appearance and flat peanut butter taste. Avoiding the purchase of immature beans is the best way to avoid contamination by these defective beans.

    FOXY BEANS

    As you might imagine, the name comes from the color of a red fox.

    This rusty-red color is generally brought about by the beans being over-ripe. These beans tend to have a dead embryo and will give you fruity fermented and nutty flavors.

    TRIPLE CENTER CUTS

    These are deformed beans caused by malnourishment due to either drought affected conditions or lack of minerals, creating ragged beans with multiple center cuts.

    During the roast, these beans can split open at their double or triple center cuts. They are fragile, soft and very permeable; which will over roast, creating a heavy body, a flat cup and a smoky, burnt taste.

    STINKERS

    Stinker beans can have a normal formation, but have a dead embryo and are yellow in color caused by over-fermentation and/or over-ripe. If crushed, broken or cut open when raw, they put off an order that's very unpleasant.

    Even one or two stinkers in your roast can ruin the whole batch and give you a foul cup.

    OVER-FERMENTED

    These beans look soiled and have a tobacco color.

    When roasted you'll get a pulpy, sour flavor and unclean, dirty cup; with a smell of rotting flesh or a cow shed aroma. If only slightly over-fermented, your roast may give sour and onion flavors.

    DISEASED

    These defects are brought about by the coffee being affected by various diseases like CBD (Coffee Berry Disease) and Leaf Rust.

    When disease strikes a coffee farm, the mother plant will produce beans that are premature. This will affect the berry before it ripens, usually at the milk stage, and the beans will either not develop at all or only partially develop, with a very small berry or nonexistent berry inside the parchment within the cherry.

    The deformed part of these beans looks somewhat brownish to very dark brown in color, often with deformities that resemble a chipped off piece where the bean is left with dark brown marks which go deep into the bean. The deformed part of these beans is generally flaky and ragged in formation.

    These small diseased beans will be only partially developed, but can still be harvested and end up mixed with other beans of normal quality, then sold in the marketplace.

    SO, WHAT DO YOU DO?

    • First, avoid these nasty defects when you're purchasing green coffee whenever possible.

    • Second, educate your customers about the tastes inherent in a quality cup. An uneducated palette can even get accustomed to over-fermented, moldy, musty, peanut-buttery and other flavor defects that are actually toxic when ingested into the human body!

    • AND, continue your quest to create the perfect roast!

    Choosing a good coffee maker is not a decision to be taken for granted. If you are going to spend money on your favorite coffee, you will want to make sure the coffee maker you choose is of good quality and has the features you want. The majority of coffee makers are generally quite good and you will notice no difference in the taste of your coffee from one brand to another. There are some basic features to look for when choosing a coffee maker and some luxury features that may give you a better tasting cup of coffee

    The first decision you must make in choosing a coffee maker is what type of filter you would prefer. You can choose a basket type filter or a cone shaped filter, the difference in the two being different contact times between the coffee grounds and the water. A basket type filter seems to provide a longer contact time between the water and the coffee grounds, so if a basket filter is your preference, make sure you use coffee grounds that are fairly large. Cone type filters are generally less prone to spillage. If you are considering a gold tone filter, it will give your coffee a richer taste, but the upkeep may not be worth the small difference.

    The color of your coffee maker is not a major concern, but keep in mind that if you choose a color that is pleasing to you, your coffee will seem to taste better. The only real issue involved in the color of your coffee maker is to remember that white stains easily and tends to look old rapidly. A dark color will look new a lot longer than a white coffee maker. Coffee makers with a pot that has a long neck will be harder to clean. If you cannot easily wash the coffee pot with soap and water, your coffee will taste stale over time due to the build up of residue that cannot be cleaned easily. Make sure your entire hand can fit inside the coffee pot to make cleaning easy.

    Other than the basic features, which include color, filter, ease of cleaning, etc., there are some additional features that you may want to consider. If you don't mind your coffee grounds being exposed to air overnight, a timer is a wonderful thing to have. Timers will allow you extra time in the mornings and if you choose a coffee maker with an attached grinder, the noise would probably eliminate your need for an alarm clock. A feature that is often overlooked is the shape of the housing around the coffee pot. Many manufacturers are making the housing larger so that the coffee in the pot stays hotter. The housing area in any good coffee maker should cover at least half of the coffee pot, the keep heat in.

    In general, coffee that is freshly ground tastes better. Grinders that are attached to coffee makers are a bit of a hassle. They make the coffee maker harder to clean and the coffee beans are not always ground uniformly. If you want a coffee maker with an attached grinder, look for a burr grinder rather than a blade grinder. You may also want to look into a coffee maker with a built in water filtration system. Filtered water does tend to make the coffee taste better, but purchasing distilled or purified water can serve the purpose just as well as a built in water filtration system.

    For the perfect pot of coffee, the water temperature needs to be around 200 degrees Fahrenheit. In general, the less expensive coffee makers do not reach this temperature. Most of the better brand names will advertise the temperature you can expect your coffee to reach while brewing. Choosing the right coffee maker is not easy. Make sure you purchase from well-known manufacturers. You will be able to find replacement parts and will be assured of an acceptable level of quality. Choose a coffee maker that meets your basic needs and any has additional features you desire.

    Delicious Selection of Coffee Blends

    There was time in American when the choice was either drip or instant and sugar or milk. It was all about Folger's coffee. Then, the world exploded with options, from Kenyan Peaberry to Brazilian Bahia. Today, there are varieties in terms of style, country and blend to make even the expert coffee drinker pause to think for a moment.

    It should come as no surprise that Brazil, the world's largest coffee producer, has some of the most wonderful blends and aromas, such as the Minas Gerais. With one-third of its land suitable for growing coffee trees, Brazil certainly has enough bean potential to work with and create these delicious brews.

    The second largest in volume is Columbia, but perhaps the country most commonly associated with coffee growing. Columbia produces a light, sweet coffee made from Narino or Popayan that is superior to most. It comes in either excelso or supreme.

    Beyond Brazil and Columbia, there is still a wide array of blends distinct to different parts of the globe all adding their own unique color to the coffee palate of choices.

    Mexico, for instance, refuses to be beat by its neighbors South America or Central America. Its small coffee beans produce a light acidity giving the brew a slight mellow taste. Cuba, on the other hand, produces a strong cubano coffee that one drinks like a tequila shot.

    Fine aged coffees can be found in Indonesia where the warmer climate produces a deep, less acid brew, while its nearby coffee producer Malaysia produces a fairly strong coffee due to its use of a muslin bag in the brewing process. The Liberica is, certainly, a brew that coffee drinkers should experience.

    Thailand is known for its chicory-tinged brew served with condensed milk over a cup of ice for a chilled twist to the traditional cup of coffee.

    The Kona is a medium-bodied, sweet brew found in Kona while a rich flavored Java can be found in Sumatra. The Beanya produced in Kenya it's a deep, smooth brew yet with a slight undescribable aftertaste.

    The process of roasting beans, then crushing and filtering through hot water originated in the fifteen century and has produced many delightful tastes for the coffee lover.

    Of course, Europe will not accept second place and, as such, coffee drinkers in France favor the half coffee-milk blend, caf au lait. Austria still prefers its one-third regular and two-thirds dark blend which has been a traditional Austrian blend for years.

    However, for me, I like the good old fashioned black coffee. This is not to mean I do not enjoy specialty blends, but just give me a cup of coffee. But, all coffee lovers have their own favorites. Go out and try all of the different blends and flavors available today!

    My wife and I love to wake up to hot coffee every morning. We used to own a Braun coffee maker with a timer, and it worked well for us for many years. When it finally bit the dust, we pulled out a Gevalia coffee maker that we got for free. We hated it, mainly because it was difficult to fill without splashing water over the kitchen counter, and the coffee just wasn't as hot as our old Braun. I did quite a bit of research online, and used the reviews from Amazon and Consumer Reports to decide which coffee maker to buy next. I settled on this one, mainly because I bought the scaled down version (without the timer) to use at work and it was easy to fill and clean. My wife and I do enjoy this one, but the coffee just isn't as hot as what came out of our old one. It is easy to use, and does a reasonably good job. Setting the timer is straightforward. The only other criticism I have is I wish it made 12 cups.
