With rising prices, and talk of the "credit crunch" wherever you go, what advice can I give coffee shop owners with regard to maintaining your profit margins without losing customers?

  1. First, it is essential that you pass on the price rises to your customers. Your suppliers are passing on their higher costs to you; if they tried to absorb the increases and keep their prices to you stable, they would go bankrupt. So, you have no alternative but to pass on the increased costs to your customers. You should bear in mind that your customers are already aware of the rising cost of food, and any increases you make to your beverages or snacks will come as no surprise to them. Remember, also, that whilst restaurants may suffer as customers give nights out a miss, a quick visit to the local coffee shop will not seem so expensive in comparison.
  2. Treat the current economic environment as a challenge, a chance to beat your competition by focussing on great customer service and introducing promotions, such as one coffee for the price of two for a limited time, or by introducing new items.
  3. Try and reduce wastage. This could simply be by reducing electricity bills - ensure lights are switched off in staff areas when rooms are not in use, such as stock rooms. Review settings for your air conditioning. See if you can reduce the hours worked by your staff - there may be certain times of the day or week when you do not need so many employees on the shop floor.
  4. Looking at your suppliers, you may need to bargain a little more, and perhaps pay earlier in order to achieve further discounts. Perhaps switch your orders to lower priced goods with good margins.
  5. You could also bring in a few cheaper lines that can be picked up at the till. For any unhappy customers, offer a 10% discount voucher to be used on their next visit. Offer discount vouchers for purchases over a certain level, say 15. You might also consider reducing slightly your top selling items in order to increase volume of sales.
  6. To recover the costs on items where suppliers have increased prices, you will need to increase the amount you charge in your shop. Don't do this all at once, introduce the higher prices on a couple of items each week. This way you should be able to maintain your margins without losing customers.
  7. Ensure your premises, and your staff, are immaculate and reflect the type of service your customers cannot find anywhere else.

And remember, most coffee shop frequenters are looking for a comfortable environment and friendly staff. If you can provide that, they will be willing to pay a little extra for their coffee.

Here is a trick if you end up with grounds in your coffee. Poke a hole in a regular coffee filter and put it in the perk basket. Watch the percolator for the coffee color. The longer it perks the stronger your coffee will be. A perculator coffee pot takes practice but they make great campfire coffee.

    If you use unpleasant lake, well or tap water your coffee will never taste very good. Coffee is 98% water so using good water will make all of difference in good or bad coffee. Bring good water with you and you will enjoy your campfire coffee a lot more.

    Susan starred down at her sugar-free vanilla non-fat latte with two Splenda and she giggled to herself. As she dipped her coffee pinwheel cookie in her latte she heard a voice across the very small table ask her a question, "What made you laugh just now?" At first she was surprised and then she remembered. She was on a date. "Oh, I was just thinking about how ridiculous it is that I'm dipping these fattening little cookies into this supposedly non-fat drink."

    He chuckled a little, "That is pretty weird. Can I say something to you?" He was sipping his Chai tea and trying fairly hard to act very wise in the background of it. She smiled and leaned a little closer as she tried to remember his name. He continued, "You seem like someone I could curl up with on the couch." She thought he thought he was cunning and it amused her. She supposed she wanted the same thing anyway. He was pretty cute to start with. "Yeah, I was thinking the same thing about you." She invited him over for tomorrow night to watch a movie. After all, she didn't want him to think she was fast. She giggled at herself and didn't kiss him goodnight. She figured that she might as well let the tension build until later.

    Susan was in bed and with a man. She was amused and he had been too. She was with him, but she might as well have been alone. She like the personal contact, but it was no more than that, personal. She didn't want to use him so she faced him and gave him a look as if she was really truly happy. She felt as if she was in a movie.

    Then he spoke and it ruined it. "Have you ever been in love?" She lost her composure for a second and then quickly recovered. "Yes, and I still am." She couldn't be dishonest after what they just did. He replied, "Mine was a lawyer, how about yours?" "He's impulsive, sweet, creative, the only person I really feel knows me, and very married. Very." She turned her back on him and hoped it didn't hurt his feelings as she began to cry. Susan felt him shift uncomfortably in the sheets behind her. "I'm sorry, I didn't mean to make you upset."

    She worked on getting herself under control and sat there in that stunned state. "I never committed adultery with him you know. No, I was too far above that. He doesn't know anything and I can never tell him. It's like an invisible knife that twists in my side every hour. It hurts me." She realized that she was talking to herself again and that the man was not in the room, although he thought he was.

    He brought her coffee and she starred into it. She was naked, and not just physically. For once, she didn't care. There was no sucking in her stomach, no hunching over, just sitting here sipping her coffee. She looked in his face for the first time. "What's your name?" "Adam, what's yours?" "My name is Susan and I'm afraid....Adam, that I'm not myself today and I apologize."

    "I don't know you that well Susan, well probably not at all but I would say that you're more yourself than I have seen you, therefore it is time for me to take my leave." As he went towards the door she said, "Adam, thank you for understanding."

    The door shut and she dreamed of pinwheels, the pinwheels that brought her amusement, for those where the cookies that the man she loved placed on her plate, where she laughs, and they shared everything including the cookies. His eyes echoed in her mind.

    Ingredients: 1 cup of whole-wheat flour, 2/3 of a cup of all-purpose flour, 2 tsps of non-fat milk, 1 tsp of baking powder, 2 tsps instant coffee granules, 1/8 tsp of salt, 1/4 cup of sugar, 1/4 cup of Splenda, and 1/2 cup of margarine softened.

    1) Mix the flours, baking powder, and salt in a bowl. Beat in a 1/4 cup of margarine with 1/8 cup of Splenda, and 1/8 cup of sugar with an electric mixer at medium speed until creamy. Mix in half of the dry ingredients. In the remaining dry mixture beat the remaining margarine, sugar, and Splenda until creamy. Mix in the coffee mixture.

    2) Roll out both doughs on a floured surface into rectangles 1/4 inch thick. Brush the plain dough with the milk. Top with the coffee dough and roll up tightly from a long side. Pinch seams to seal. Wrap in plastic wrap and refrigerate for about 30 minutes.

    3) Pre-heat the oven to 350 degrees. Butter two cookie sheets with cooking spray. Slice the dough 1/4 inch thick and place 1 inch apart on the cookie sheet. Bake for about 12 minutes or until golden. Transfer to the wire racks to cool.

    Purchased to replace a Mr. Coffee that finally gave up the ghost. Had comparable features like auto brew timer and auto shut off. Will be replacing it soon with another Mr Coffee. When you pour the first and second cups you can expect to make a mess with the dribble carafe. It is difficult to fill the coffee maker with water without making another mess. I dont know why they added a splash bar across the fill area but it does make filling it with water a challenge. On the positive side the brew timer and suto shut off work well and it makes coffee as you would expect. The big down side is that useability is lacking.

    I have had this coffee maker for about a month. I thought the longer I had it, the easier it would be to pour coffee into a cup or water into the maker without making a mess on the counter top. I was wrong. I am going to return this one and get one of the 'real' Smartbrew Black & Decker coffee makers. This one is not a 'Smartbrew' model. The Smartbrew models have what B&D calls a Perfect Pour spout. These carafes are a breeze to pour. No dribbles, ever. Why they don't use the nicer carafe on all their models is a mystery to me. I have had a non-programmable B&D Smartbrew coffee maker at my camper for 7 years. It makes way better coffee than this one and the carafe is way better.


    One benefit of drinking a beverage that is both historic and international is the variety of ways you can enjoy it, which is one of the reasons coffee has become so popular today. Just go to a local coffee shop and look at the menu. The flavors, blends and combinations are endless. The Caribbean, Mexican mocha and Cuban cubano are just a few of the many you might find.

    The Caribbean is an unusual recipe, but worth the try. Bake a coconut for approximately thirty minutes at 300 degrees Fahrenheit. Then, remove the coconut and allow it to cool. Once cool, crack open the shell and remove the grate and flesh inside. Mix and heat the coconut milk, meat and a half cup of cow's milk in a pan until it thickens after which you need to remove the granules of coconut which is best done by straining the mixture. Then, mix it with a cup of coffee and enjoy.

    The Mexican mocha is a tasty blend of chocolate and coffee, as with any mocha. Add a teaspoon of chocolate syrup and a quarter teaspoon each of nutmeg and cinnamon to a cup of coffee, as well as white sugar to your individual likeness. For an extra bonus, you can add some whipping cream on top, or even mix it in.

    The Cuban cubano is enjoyed like tequila. Take it straight and like a shot. Some may prefer to dilute the drink with some hot milk or rum, but adding any more than a tablespoon of milk will ruin the invaluable taste of the cubano drink itself. Go ahead and add rum to taste.

    Some other international drinks to enjoy are Turkish, Vietnamese and Viennese.

    To make the Viennese, melt an eighth cup of dark chocolate into a sauce pan and stir in a tablespoon of light cream. Once blended, sprinkle some cocoa and cinnamon across the top and enjoy.

    Now, the Turkish is a fairly easy recipe, but you will certainly benefit from finding a dzezva pot in which to boil the coffee. Yes, you will need to boil it. Turkish coffee has a very strong flavor. Begin with some finely ground Turkish coffee. Pour one cup water into the dzezva and bring to a boil after adding a half teaspoon of sugar to the pot. Once it reaches a boiling point, remove it from the heat and add one teaspoon of the Turkish coffee. Stir, place it back on the heat and then remove it after you see a layer of foam. Once it has cooled and settled, drink up and enjoy this robust, delicious blend.

    The Vietnam is one chilled coffee you do not want to miss. Once you find a Vietnamese coffee press, you are on easy street as that is the challenging part. Now, place the grounds into the press, pour one tablespoon of condensed milk into the bottom of your cup. Pour boiling water over the press. Let it drip, then stir and add ice.

    Besides trying out these recipes, your other option is to just travel the world and let the local baristas do the work. Otherwise, it is up to you!

    I fist purchased this for work since the original one we had was finally starting to have issues. I don't think it was a matter of the unit failing, but more so it wasn't properly taken care of. I purchased another one for my dad and the first thing he also noticed is how fast this will brew a pot. The coffee even tastes better due to the way it brews the coffee grounds. I would get one for myself as well, but I don't drink enough coffee to make 12 cups worth.

    I have two. They make good coffee. The problem is that on one of them the top of the canister that screws into the bottom of the canister was poorly manufactured such that it hurts my hand each time I screw it in, and it has never gotten better. Making matters worse, this screw-in top has little ridges all around its edge, presumably for better grip. Well, these ridges on the flawed top dig into the hand, causing great pain as I struggle to turn it. So, I have to use a dish towel over the cap when hand-turning it in or out.     The reason for brewing coffee into a thermal carafe is that they keep your coffee hot, without the need for a hotplate.

    Traditional drip brewers have a glass carafe that sits on a hotplate. The hotplate keeps the coffee hot, but it also "stews" the coffee over time. As a result, coffee poured from a glass carafe after half an hour or so has a bitter, stewed and generally nasty taste.

    That's why people in offices take one look at the last cup remaining in the carafe, turn up their noses, pour it down the sink and make a fresh brew. (Or wait for someone else to make it.)

    How long does coffee stay hot in a thermal carafe? Some manufacturers claim it will stay hot for up to two hours.

    Our experience, so far, has been that after an hour or so the coffee no longer has that fresh-brewed, hot taste.

    To maximize the length of time your coffee stays hot, "pre-heat" the carafe before you start brewing by pouring hot water into it, swirling it around and pouring it out again.

    By doing this you ensure that none of the heat of the coffee is expended on heating the glass interior of the carafe.
